Magnolia Cup Cakes

Abstract

This is the recipe from the famous New York Cup Cake shop called "Magnolia's".  People queue for these cakes.


Ingredients

  • 1 1/2 cups SR Flour
  • 1 1/4 cups Plain Flour
  • 250g unsalted butter
  • 2 cups castor sugar
  • 4 large eggs (at room temperature)
  • 1 cup Milk
  • 1 teaspoon vanilla extract

Frosting

  • 250 g unsalted butter
  • 6 cups icing sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

 


Method

Preheat oven to 160 degrees fan forced oven or 180 degrees conventional

Use Muffin or large Cup Cake papers and a muffin tin is a way to keep them in good shape

Combine and sift both flours in a small bowl

In a large bowl, cream butter until smooth (medium mixer setting)

Add sugar gradually, and beat until fluffy, approximately 3 minutes.  Add eggs one at a time beating well after each addition.

Add dry ingredients gradually with milk and vanilla extract.  Beat until all ingredients are combined.  Be careful not to ober beat.

Using a spoon fill the cupcake papers to 3/4 full.  Cook for 20-25 minutes.

Once cooled ice the cupcakes with Magnolia's Vanilla Buttercream Frosting - use whatever colours you like for the frosting.

Frosting

Place butter and 4 cups in bowl and combine with milk and vanilla extract.  Beat on medium spped until smooth and creamy approximately 3-5 minutes. 

Add remaining icing sugar one cup at a time and beat well after each addition approximately 2 minutes.  Add a few drops of food colouring if desired.
