Cheese & Bacon Savouries

Abstract

Rhonda's speciality.  They can be made up to 24 hours before baking.  They are also suitable for freezing.


Ingredients

  • 100g diced bacon
  • 2 tablespoons drained canned diced capsicum
  • 1 cup grated cheese
  • 2 tablespoons mayonaise
  • 1 tablespoon chopped parsley
  • 3 spring onions, sliced thinly
  • 1/4 teaspoon curry powder
  • 14 slices white bread 30g melted butter
  • toothpicks
  • 2 olives, chopped (if you like olives)

Method

Cook bacon pieces in microwave, drain on absorbent paper.  Combine capsicum, bacon, spring onions, parsley, cheese, mayonaise, and curry powder. Using a spoon mix well.

Cut the crusts from the bread and flatten with a rolling pin.

Spread a layer of mixture over bread, roll up, cut in half and secure with a toothpick.

Place savouries on a baking tray lined with baking paper.  Brush savouries with butter and bake in a moderate oven for 10 minutes or until golden brown.
