Avocado, Mango and Walnut Salad

Abstract
A bit different. Tangy and colourful.
Ingredients
- 2 Avocados, peeled and sliced
- 2 Mangoes, peeled and sliced
- 1/2 cup walnut halves
- 3 bacon rashers 9 finely chopped
- 1 mignonette lettuce
Dressing
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon french mustard
- 1 tablespoon thickened cream
Method
Cook bacon in pan until crisp; drain.
Arrange avocado, mango, walnut halves and bacon over a bed of mignonette lettuce, top with dressing.
Dressing
Combine all ingredients in a jar, shake and pour over salad.
