Banana Cake - Simple

Abstract

Brendan & Philip make sure this doesn't last too long in our house


Ingredients

125g softened unsalted butter

1 1/2 cups castor sugar

2 eggs

1-2 mashed ripe bananas

few drops of vanilla extract

250g plain flour

1 teaspoon bicarbonate of soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon of mixed spice

1/2 cup buttermilk or 1/2 cup milk mixed with 1 teaspoon lemon juice

WALNUT TOPPING

3 tablespoons chopped walnuts

3 tablespoons SR Flour

1 1/2 teaspoon ground cinnamon

3 tablespoons brown sugar

100g softened unsalted butter


Method

Preheat over to 180 degrees.  Butter and flour a 22cm square cake tin then line it with baking paper.

Cream the butter and sugar until pale and fluffy.  Beat in eggs, banana and vanilla extract.  Sift dry ingredients and add to mixture, alternating with milk.  Bake for 1 hour.  Check that cake is cooked using a skewer.

WALNUT TOPPING

Combine all ingredients and scatter over uncooked cake
