Paella

Abstract

Another great "one pan" dish.  Looks and taste great. 

Serves 6


Ingredients

  • 1 Tablespoon olive oil
  • 1 chorizo sausage, sliced thinly
  • 1 medium brown onion, sliced thinly
  • 1 medium red capsicum, sliced
  • 2 cloves garlic, crushed
  • 2 cups medium grain white rice
  • 1/4 teaspoon turmeric
  • 1 cup water
  • 375ml fish stock
  • 400g can chopped tomatoes
  • 1 cup frozen peas
  • 500g good quality marinara mix
  • 250g peeled green prawns (optional)

 


Method

Heat oil in wok or Paella pan

Cook chorizo, onion and garlic.  Add capsicum, rice and turmeric.  Cook stirring for one minute.  Add water, stock and tomatoes.  Bring to boil then reduce heat and simmer uncovered for 5 minutes.

Place peas, marinara mix and prawns on the rice in the pan.  Cook covered over low heat for about 10 minutes or until rice is tender and seafood is cooked through.
