Baked Salmon

Abstract
Any fish can be used. Presents well.
Ingredients
- 4 Salmon fillets
- Punnet cherry tomatoes
- 4 lemons
- Jar capers
- Chopped parsley or coriander
- Large Handful Snow Peas
- Bunch Asparagus
- 4 Sweet Potatoes
Method
Place salmon in overproof baking dish. Squeeze 4 lemons over the salmon.
Cut cherry tomatoes in half and place in dish with salmon.
Place tablespoon capers over salmon followed by a handful of parsley or coriander.
Bake for 30-45 minutes in moderate oven.
Serve with steamed snow peas and asparagus on a bed of mashed sweet potatoes.
