Spinach and Mushroom Chilli Pasta

Serves 6


Ingredients

  • 400g fettuccini
  • 1 tablespoon olive oil
  • 1 teaspoon crushed chilli
  • 6 rashers bacon, diced
  • 6 large mushrooms, chopped
  • 1/2 cup cream
  • 1/2 grated parmesan cheese
  • 1 clove garlic
  • 80g baby spinach leaves
  • salt and pepper to taste

Method

Cook pasta in saucepan of salted boiling water for 10-12 minutes. Drain and keep warm.

Heat oil in large pan or wok.  Add garlic, chilli and bacon.  Cook for 1-2 minutes.  Add mushrooms and cook for 5 minutes until mushrooms are tender.

Add pasta, cream, cheese, spinach, salt and pepper.  Toss for a minute until all ingredients are combined
