Thai Red Curry Chicken

Abstract

Quick, easy weekday meal


Ingredients

  • Olive Oil
  • 1 Packet "The Curry Makers" Thai Red Curry Sauce
  • 500g diced chicken
  • 200g diced pumpkin
  • 100g diced red capsicum
  • 1 can (300ml) coconut milk

Method

Heal oil in wok or pan.  Add chicken and cook for 2-3 minutes, add vegetables and tir until ingredients are partly cooked.

Add sauce and simmer for 2 minutes

Add coconut milk and simmer for 5 minutes

Service with Rice or Noodles
