Fried Rice

Abstract
An old favourite - also great the next day
Serves 4
Ingredients
- 2 teaspoons peanut oil
- 1 medium brown onion, chopped coursely
- 2 cloves garlic, crushed
- 2 teaspeens grated ginger
- 300g lean pork mince
- 1 stick celery, sliced thickly
- 1 small red capsicum, chopped coursely
- 1 large zucchini, chopped coursely
- 4 cups cooked doongara rice
- 3/4 cup frozen peas
- 1/2 cup soy sauce
- 2 spring onions, sliced thinly
Method
Heat oil in wok, stir fry bown onion, garlic and ginger until onion has just softened. Add pork, stir fry until brown and cooked hrough.
Add celery, capsicum and zucchini, stir fry until just tender.
Add rice, peas and sauce, stir fry until hot. Toss spring onions through fried rice just before serving
